This is my theory: He has his "pre-made" bottle in his hand before he approaches the crowd. Notice he distracts the crowd by picking up the other beer, to divert attention from his fixed bottle. A cap is already in the green bottle, barely adhering to the side of the bottle that his hand covers up. He hits the bottle, grabs the cap with his palm and knocks the cap inside the bottle loose, thus creating the effect. Brilliant, but simple.
