1. that is the biggest shrimp i have ever seen
2. there is a vein running underneath the shrimp. how come i never see anyone removing that one.

That's because the "vein" contains feces.
I was always told that it was the spinal-chord (and I suppose de-veining it ussually removes that also), but it turns out that the main reason why we "de-vein" shrimp and crawfish before cooking them, is that it is actually the intestine.
Which of course, is where its waste passes through.
