Those strings are called phloem bundles, which deliver nutrients to vascular plants.
The reason they often come off of the peels is because we peel bananas backwards, against the grain. What is consider the top of the banana is actually the bottom of it. If you even seen a monkey eat a banana, you will notice that they peel it in the "reversed" direction.
