    Definitely going to try your recipe. We have some beautiful Aubergines here in Bosnia and I think I will use some of our local sheep milk cheese as a topping (sharp and pungent but not overly so) combined with the parmesan. I even thought about some bread crumbs for an 'Au gratin' slant or would that be sacrilege?

  • This dish looks amazing!!! Although I would consider it more of a eggplant lasagna than a parmesan. I will be trying this.

  • Looks really good, I've recently learned to appreciate egg plant and make it all the time now. Oh here's a tip; Ri"cotta" is actually pronounced Rigoata (with an italian accent! ;) try it!

  • I'm not convinced that cooking spray is good for you. I've tried them - olive oil, butter, and (think) it was canola oil, anyway, they have a chemical odor and taste. I'll stick with olive oil. Yes, it has a few more calories but we know it's good for you.
