I decided to make a video of what I've been enjoying for lunch for the last week; Red cabbage wraps! You don't have to use what I've listed, so feel free to experiment with different veggies!

- Red cabbage
- spinach
- tomato
- avocado
- "hummus" (Homemade by yours truly with white kidney beans + garlic)
- shredded cheese
- orange peppers
- baby carrots

Cabbage is rich in Vitamin K, which is essential for intestinal health, and it has a great crunchy texture that doesn't ever get soggy from sauces/condiments! :) Plus, WAAAAY low calorie, compared to traditional flour tortillas. If you don't like Cabbage, try using lettuce or the leaves of Collards. I find that when I use hummus or mustard along with all my ingredients the taste of cabbage is pretty well non-existent.

  • I used 1 can of white kidney beans, 2 cloves of garlic, and as much of the "water" from the kidney beans can as necessary to facilitate smooth blending. Throw it all in a blender and voila!
