  • Bruschetta is delicious.

    I had it once at this amazing eatery in my city and they used a very interesting ingredient - citrus! Peeled segments of orange and grapefruit were cubed and mixed in with the tomatoes. The tart yet sweet citrus worked so well in the dish.

    As well, goat cheese is a great substitute for mozzarella.

    That's why I love cooking... so much room for tweaks and customization.
