If you tap twice you will start a new trip. Since in this case they rode from end to end, their transfer credit would pay for a return trip.

Great, now I have to have this fucking card or I get raped by paying each time I step on a SoundTransit buss (no transfers like Metro). Plus this tracks where I've been going.. Why? What does happen if you tap out twice after disembarking? Will it slap on a return fare for the other direction?

It will slap you the maximum fare minus the fare you already paid (as transfer credit) but you can tap it again to cancel.
