This is the closest I've come to finding Avinu Malkenu sung accapella. Religious considerations aside, the traditional melodies for Jewish prayer were composed for acapella performance, and I think instruments detract from their beauty. Though if you are going to have instruments, one guitar is certainly the way to go.
