For the "real-world application" of medieval techniques you might want to check out "faust". It's something in development of my instructor at the AMEK which is short for Academie of Medieval European Martial Arts in Dutch. I think theres something about it on swordfighting.eu
@BuscoBeast I'm pretty sure Aaron has training in other martial arts, of course he is capable of training people in this Art from what I've seen and heard.
@jediknight2694 Please note that this is not sport wrestling, so the face, hair, chin and throat are places you need to protect, which is why the wrestling is kept more at arms length rather than closer in. Also, back then there was a good chance you'd run into a man with a dagger, which is another reason. Also note this is a drill specifically designed for feeling, not actual wrestling.
