This is my dad who has been a meatcutter for almost 40 years teaching me how to cut up a strip loin at home. He is describing all of the steps in great detail, so that I can do it myself the next time. Buying large pieces of meat like this from costco cuts the price almost in half. Strip Loin cuts up into a pile of really nice steaks...

  • What do you do with the extra little bits that you cut off and leave to the side?

  • @zodiacair There must be a difference in Costco beef suppliers up in Canada compared to the USA. I get the cryovac whole strip loin and/or sirloin from either Costco or a restaurant supply store. The price per pound is significantly lower than at any butcher shop or grocery store even when they run sales. I cut it myself and vacuum seal before freezing.

  • Thanks for all the comments!! The reason my dad is using the wrong knife is because he is at my house using my crappy knives that I have in my kitchen. We didn't plan on making this video for youtube so he didn't bring all of his real cutting knives with him. This video was made for me so that I can remember how to do it, and it turned out so well we decided to throw it up on youtube.

    Glad it's helping normal people that are just trying to save some money cutting their own costco meat...

  • Just a suggestion on the other side of the meat, he shows the fat side turn upside down and you will see some heavy tissue from where the meat came off the bone, best to cut that off before cutting into steaks.

  • @flopalock the colder the meat is, the easier it is to cut. i know it sounds ironic, but if it is at room temperature it gets very unfirm and will be difficult for some people to cut it straight. some people who cut wholesale beef at home even stick it in the freezer for 20 min or so before they cut it

  • do you recommend cutting the meat right out of the fridge or should it sit at room temp for a little while before you cut?

    Last time I checked out the cost of a chunk of strip loin that big from Costco it was $100-$120 here in Canada. Alot of meat there, but I tend to get my steaks at better prices at local supermarkets when they are on sale. Don't remember when Costco had meat "On sale".

    Costco is too overpriced for meat. I know this isn't the point of the video, but Costco and low meat prices don't go hand in hand.
