Agree with BX06. First redirect the line of fire, second control the gun, third counter-attack, forth disarm. What else could you do. If the attacker pulls back he would just get a kick to the nuts rather than a knee.
And as to the switching hands, even if by some miracle he's able to do this the gun has probably jammed. Eyal's covering the ejection port with his hand.
Also once you get to a certain level you probably have the counters to the counters.

@JORDHOLMEN I hear you! I'm a Krav practitioner and have extensive MMA background. I think Krav Maga should be approached as a system of techniques and principles, on which one should build and expand.

Show a gun disarming where the attacker does not retreat after the initial grab/blow but fights back to retain his firearm. Most of these clips dont show intent as one would encounter in a real life situation. Nothing stops the assailant from switching gun hands (at the initial grab) and putting two in your chest
