I made these flip books for my nieces using iStopMotion and my iSight camera (laptop videocam).
I set it up so that the software took a picture every 30 seconds, and made it 15 fps.
After you are finished with the video, iStopMotion has a feature where you can save your file as a PDF. It automatically numbers the pages of the flip book and sets up the page to be cut.
I haven't messed around with claymation before, but after getting this program I can see myself doing it more. It's just too bad the software doesn't recognize my Sony HD video camera.
how did you set the frame rate?

Had the software take a snapshot every 20 or 30 seconds to give myself enough time to move the clay and get my hands out of the way. Frame rate was 15 fps

I bought it and downloaded it online- I think it was around 50 bucks
