Tommy from www.BrewFanatics.com takes you through the steps of making your own beer. In this video he shows you how to bring your wort to a boil and then cool it right back down again. aeration is important, yes, but rehydration is not, neither is stirring like he was doing at 6:00

Can you not just add ice to the wort after the boil? I've made two batches now with bagged ice from the store and had good success.

By 'quicken the time of the yeast action' I meant the START of the yeast eating those sugars, not the total fermentation time.

You might want to mention the actual temperature of the wort as you poured it into the fermenter. And, for the powdered yeast, I like to rehydrate it with a mix of 8 oz each of the wort and the water for 20 min before adding it to the fermenter as that quickens the time of the yeast action. And while that rehydration is happening I pump air into that wort in the fermenter with just a simple aquarium air pump (as that will also quicken the time of the yeast action).
