You talk about wearing the glove and food safety, then proceed to use a salt and pepper mill which requires two hands, thus placing raw meat on your equipment. You could have not bothered with the glove and just touched the meat using tongs.
Also, as a minor point, when moving the steaks over to one side of the grill, try laying them in the opposite direction so that it gives the nice effect of diamond char lines.
Good to see steaks on the bone. I think meat on the bone tastes better.

Cool so the different woodchips gives the meat different flavor? What's step 1 how to setup and prepare the gril? What's the best and easiest gas, electrical, or etc? Can you do fish too?

How long did you sear it on each side?
