it just proves alot of western chefs are wrong about saying that cooking omlettes on high powered stoves at high heat very quickly makes them over cooked and tough. Its all about technique.

Sure looked brilliant at the end. I'm just a tad surprised he fried it in oil and not butter as I find butter makes for a much better flavour i.m.h.o, but hey, great techniques shown and the cream makes it kinda buttery sorta.
