The bouncyness of the ball also is determined by the court! So that will probably be why it looks bouncier in this video because this court is a very good, probably heated as well. Also the rallies last a long time so the ball gets warmer and naturally bounces better. The ball shouldn't be a factor as they are probably using the standard double yellow?

hehe, pretty interesting and philosophic answer. I mainly do it just to wipe out some sweat from the palm of my hand in order to get a better grip from the racquet. But maybe there is more into it than meets the eye...
