Sunday 23rd January.
Day 5 of construction. The air is thick with the overwhelmingly sweet aroma of chocolate, and there is also excitement in the air. The atmosphere has shifted from panic and doubt, and has turned into a sense of elation, determination and accomplishment.
Paris credits John and Jean-Michel with enabling her vision to come to life. They were the brains behind the plans, which the staff and volunteers have managed to follow.
The sails on both boards have now been sculpted, secured and ganached. At the moment, it looks like a muddy brown replica the Opera House.
The Dream Team worked around the clock to get the whole cake covered in ganache. This ganache has been smoothed to perfection with improvised tools (a paint trimmer from Bunnings was converted to a large-scale ganache smoother!), ready to set overnight. Tomorrow at 5am the real fun of covering the whole cake in white fondant will begin. This is where the meticulous cake decorating skills of all the volunteers will truly be tried and tested.
Paris and her Dream Team will have to race the clock to get the cake perfectly covered in fondant. Every lump and bump will be visible if they don't get this right. Can they do it?
