Cool experiment. Will have to do something like that too.
Look at my 27 Volts Energizer battery creating an under water arc at 230 Volts test voltage.

I would think it would be hydrolyzing the water and igniting the hydrogen, but a hydrogen flame is characteristically red.
Maybe something about a higher concentration of oxygen and the gas ionizing and making a bigger arc than air, which is nearly 3/4 nitrogen.
Possibly something to do with ozone. Have no idea what though...

Most are around 2100V, but a few rare ones from "industrial" ovens exist which might be ~3kV.
