  • Shouldn't the shrimp be added until the end since it cooks so quickly and toughens up after it's been overcooked?

  • i only cook the shrimp briefly and then remove it to prevent overcooking, i return it just when the dish is finished... i think this method keeps the flavours cleaner - but you could add it at the end if you want

  • When I stir fry, I normally mix all my liquids together as soy, broth, wine with corn starch, then add last after everything is cooked.

  • just use a paring knife and place a thin slit down the back side of the shrimp. Then rinse the sand and vein out.
