The problem with adding ice is that the cold can reduce the sensitivity of the taste buds on your tongue. In effect, you taste less of the scotch if its colder. This may not be a problem with a cheap scotch where you won't want to taste it, but a single malt or a high quality blend is something you want to be able to smell and taste as much as you can.
In addition, ice is usually made using tap water containing compounds like chlorine, which can negatively affect the flavor.

Not "immature" and it depends on what you add. With single malt, you're supposed to use mineral or spring water, and you just add a small amount to tame the alcohol somewhat and to open the bouquet of the dram.

I was first introduced to 'The Macallan'at a Burns night and drank nearly the whole bottle . it was a 12yr old and when i thought about the the time and history of the product that i had comsumed i was ashamed of my gluttony , i was also very, very, drunk.
I could understand if the ice were added to a glass of Johnny Walker Black (and even then, I'd shudder with that as I want to be able to taste the scotch).
But, yes, adding ice to a fine single malt is about as offensive as light beer.
I saw in another video, the bartender pouring Macallan Scotch Whiskey indiscriminately in a glass full of ice as if it were Kool Aid. I was distraught.
