"Dominoes" isn't really a game. They are a gaming device like playing cards. You can play lots of different games with them. What you described looks like the basic block game.

@lowerclassfighter She had some very large moles on her arm. Very icky eeewwww, I bet they had big hairs growing out of them. She should have kept those covered up!

You can play that way. You can play off the end of a double (well, not until the sides are used, usually) and to play of the end means you can be use any of the three sides of an open face. Later she picks up a played tile and moves it - but until that point she was demonstrating legal moves (except for playing off the end of the down before the sides are used).
