usually there is a jet chase plane that follows the shuttle, from a distance, to landing.

It's picking up both the air flowing over the aerosurfaces and the "chuff chuff" sound of the APU exhausts.

Yes, they will be being picked up by the NASA TV effects mics on the side of the runway.
