A local meat processing plant has food safety down to a science.

Schinkel's Sausage and Deli Meats in Chatham is the only local facility certified under the Ontario Ministry of Agriculture, Food and Rural Affairs' Advantage HACCP (Hazard Analysis Critical Control Points) program.

"It's a good program to have in place," owner Tim Schinkel said Wednesday. "It just gives you that peace of mind that you aren't going to make someone sick."

He said there has always been an emphasis on ensuring product safety at the local business, established in 1993.

"We've taken it a step further in becoming HACCP certified," he said. "It's all about quality.

"It's not just quality of ingredients -- food safety is a large part of quality," he said. "That's always been a priority here."

Schinkel said the company -- which processes bacon, wieners, hams and deli meats for sale in southwestern Ontario -- was certified in February.
