In a sentence: Bandwidth constraints.
I could have posted this in 1080p, but I do check who watches my videos by device, and by and large, most devices people view this in are of 720p resolution. Apple, Dell, Etc.
It's at 2,093 kbps; thats to ensure that people using iOS devices (perfect for retina display or AMOLED), Android, and most laptops could get the smoothest possible picture quality without having to deal with the buffer lags.
I HATE buffering.

@USAF2409 The space shuttle is no longer cost effective or fit for purpose, it was designed for LEO trajectories, for ISS construction and supply, since that is no longer reguarly required continuing the shuttle program would simply be feeding your nation's debt, cancelling the space shuttle program and pursuing projects like Skylon and the Space Launch System was definitely the right call, don't be so quick to judge.

@USAF2409 the space shuttle is very old now and needs to be replaced, dont be too quick to judge without knowledge of why. Also, it is hugely expensive to run.

The initial footage is definately 51-C, however the sequence shown from a distance is not.
STS 51-C was launched at 2:50 pm with the sun to the west of the pad. If you look closely at the VAB you will notice the shadow of the structure indicating the sun was in the east (morning launch).
