Latkes (לביבות תפוחי אדמה)are a traditional Hanukkah treat. So why not make them vegan? This is my first time having them, but I love to celebrate with everyone. I love potatoes, I love applesauce, I love Pancakes, so why not?

Vegan Latkes Recipe
Adapted from VegNews Vegan Latkes

Ingredients:
1-1/2 pounds russet potatoes
1 small yellow onion
1 tablespoon fresh parsley, minced
1/4 cup flour
1/2 teaspoon baking powder
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
Safflower oil, for frying
vegan sour cream optional

Directions:

Peel and grate potatoes, then place in a colander and set over a large bowl. Using your hands, squeeze out excess liquid from the potatoes. Pour off liquid and place potatoes in bowl. Grate onion and add to potatoes along with parsley, flour, baking powder, salt, and pepper, and mix well.

Preheat oven to 275 degrees. In a large skillet over medium heat, heat a thin layer of oil. Take a heaping tablespoon of batter and flatten it before gently placing it in hot oil. Make three or four more potato pancakes this way, and add to skillet without crowding pan. Fry until golden brown on both sides, turning once, about 8 minutes total.

Repeat with remaining potato mixture, adding more oil as necessary. Remove cooked potato pancakes to paper towels to drain, then transfer to an ovenproof platter and keep warm in oven until all pancakes are cooked.

Talk Time:
I am a non-exerciser, which means I hate to "work out" but I do not like to be sedentary either. One of my favorite non-exercises is walking the dog to take the trash out. That's right; walk to the trash cannot drive to the trash can. And I use the small grocery bags for trash so I do this pretty often. My dog loves it. And, it gives me one more opportunity to get moving and be productive at the same time.

  • @SU2340 Oh no, I love my dog. He will be at the end of wednesdays video. It was probably just a bad joke. If I became incapable of caring for him, I have plenty of family that would take care of him. But, I have no plans of getting rid of him

  • i dont understand why people leave comments that are saying that it looks good but since its vegan, you know, no one wants to eat it cause that makes it automatically gross. i freaking love vegetables. i LOVE them. to me eating them tastes better than eating meat and im sure this girl feels the same. so why would she be thinking of eating a cheeseburger while eating this when she doesnt even like eating meat. its kinda dumb. i thought she was prolly think it was freaking delicious

I really hope you do not send your dog to a shelter where he will be petrified and eventually killed. Please take the time to find him a home that he deserves and where he will be appreciated.
