It's like a serenade; think about a man alone singing or a man and a woman - there you have something which makes sense.

The idea with french song, especially when it's something worth reading and hearing like that, is that it is meant to be understood... the best thing with french songs is when they are almost spoken, barely sang, just to follow the tones and tempo.

I'm not a musician, but you get the idea. When you come with an opera or a group or put the instrument in front, it wastes it.

Why people feel forced to take something and modify everything about it, so it no longers means anything?

They either play instruments which do not get along well with the song - at the limit, you could think of some sorts of flutes or perhaps a oud or something whose sound is light - or they sing it very high or very low or with dozen of singers or they play it too slow or too fast...
