hi, what do you do with the stuffing when the bird is ready to eat ? do you remove it before serving ?

Just a couple of tips, even though the FDA says to pull it at 185, most chefs recommend 155 in the breast and then let it rest for a good half hour. When cutting that breast apart from the bird always cut across the tissue, not with it. You could be an announcer with your voice. Merry Christmas!

Recipe looks nice --- I use the drippings from the pan to make a gravy with the simmered stock from the neck, heart, and giblets.

Yay, someone else who doesn't wait until Thanksgiving to cook a turkey! Come summertime I like to do one on the rotisserie with an orange glaze that's good, but nothing really beats the house smelling like turkey roasting in the oven on a cool damp day. Except maybe pumpkin pie. :-)
