  • "Its not a rag, its a towel, a rag is something a woman uses once a month. A towel is what you use in my kitchen"! That is what my first boss told me oh so many years ago and it sticks today! Sorry, its a pet peeve of mine.

  • hi, what do you do with the stuffing when the bird is ready to eat ? do you remove it before serving ?

  • Just a couple of tips, even though the FDA says to pull it at 185, most chefs recommend 155 in the breast and then let it rest for a good half hour. When cutting that breast apart from the bird always cut across the tissue, not with it. You could be an announcer with your voice. Merry Christmas!

  • Recipe looks nice --- I use the drippings from the pan to make a gravy with the simmered stock from the neck, heart, and giblets.

  • Left Overs? Turkey Flautas, Turkey con Aroz, Barbeque Turkey Sandwich, Turkey Tacos, Queso Fundido con Pavo/ Turkey, BBQ Turkey Burrito, Turkey Salad Sandwich, Turkey can queso oaxaceno enchiladas!! Flovor injected Turkey!! Turkey TEXAS Style!!

  • Yay, someone else who doesn't wait until Thanksgiving to cook a turkey! Come summertime I like to do one on the rotisserie with an orange glaze that's good, but nothing really beats the house smelling like turkey roasting in the oven on a cool damp day. Except maybe pumpkin pie. :-)
