@DreDre2411 - Thanks for your interesting comment. I would shy away from using the regular banana as they are alot softer than plantain. Plantain being quite a dense starchy banana, is a cooking banana and can therefore withstand the heat of cooking without ending up a sloppy mess. Smashed banana is great in banana fritters. Try making a brandy syrup, drizzle over it and top with a thick greek yoghurt. Good luck.
