you know there's absolutely nothing wrong with quickly blanching and refreshing the vegetables first and it makes for better digestion and allows your body to obtain the beneficial nutrients of what you're eating easier. It will also make for a silkier texture while still keeping that crunch and the colours will be far more appealing too.
