Better to blend fire roasted toms and whole peeled toms so the sauce is thick and stays on the battered and fried relleno. Also, too many ingredients. A little beef base, chili powder and Salt and pepper as well as garlic gives a better flavor over all.

I´m mexican and i do the chillies clean same as you, you really know how to prepare them for stuffin, in tv the gringos do it whitout washing them, so is harder when you are preparing chillies for 30 persons, or more, as i do for my family dinners in sunday, i prepare more than 3 chillies filled whit cheese and egg capped, whit the tomatoes salsa, and the only way to clean them all fast is under water.
