Did you ever use a teflon coated stir bar and a magnetic stir plate? This might help with the coating distribution.

Both the anode and cathode are stainless steel

can you nickel plate straight onto an old part with bad chrome on it then rechrome it again or does it all need to be removed first.
I have old car door handles that i want to coat in copper then nickel and finally chrome but not sure how to go about it, any advice.

No, you need to get all of the old chrome off first. Get back to the base metal. Try de-plating the part (ie making the part the anode insted of the cathode)

will this work on aluminium? what about ceramics(epoxy)?

Yes, you can plate aluminium with nickel, but you will need to first plate the with copper, or zinc (or treat it with Zincate)
