Theramin is just an oscillator connected to an "antenna" that is very sensitive to capacitance. Moving the hand changes the capacitance between hand and antenna, which in turn varies the pitch of the oscillation. The only problem (which can be seen at the very end of this video), is that if the hand is moved to far away at the wrong time, the capacitance increases, which lowers the oscillation tone to the point where it sounds like she farted.

it's not her breathing. it's the theremin inside the Matrioshka doll. it is sensitive to hand movement.
