To answer your question: Because Colin and Justin epitomize what true love is (and what Stuart clearly also views as being true love). They complete one another, they never want to be apart, they are best friends and they have practically a fairy tale relationship. They are completely secure and each other's emotional and mental support - whenever one needs it. Stuart wants to have that kind of love and companionship with someone too - that is why he brought up Colin and Justin as an example.
