Chef's Knife

Also called an all-purpose knife, the chef's knife is usually 8 inches in length but can range from 6-10 inches. The Japanese global knife is another form. Paring Knife

Paring knives are usually small in size with a blade around 4 inches in length. A tourne knife is a curved paring knife also called a bird's beak knife; it is used for making an eccentric cut called a tourne. Boning Knife
