Sambar is a vegetable stew or chowder based on a broth made with tamarind and toor dal, and is very popular in the cooking of southern regions of India especially in Tamil Nadu, Kerala, Karnataka and Andhra Pradesh. I have never seen sambar prepared this way. The traditional way, the Kerala or Tamilnadu way doesn't use garlic and jaggery. What is this?

they never add ginger garlic in sambar.. i am south indian and we prepare sambar daily in our homes..
