Dear Maria: At last I find an american cook that knows how to make a cuban version of black beans. That is the way I do it, as per my mother recipe. Most of the time I use dry beans soaked over night and the next day put the in a pressure cooker for 20 min. Then I add the "sofrito" you just made to the soft beans and let them cook for 10 minutes more. I add 1/4 cup of dry white wine and a teaspoon of chilly powder to the same ingredients you use. Use Extra Virgin olive oil to the sofrito.

I cook a lot of Cuban food. I know some laugh about the beans out of a can. I've done em both ways....really....black beans out of a can works. If you want to soak the dry beans, have at it. I like my black beans on yellow rice with onions and red wine vinegar.

i personally would never mix my cuban food with mexican food but anyway.
here's a tip. add some FRESH culantro to the beans as you're cooking them. and/or try adding "cachucha" peppers. they give it a really nice flavor. they're not HOT peppers.
