First let me say, sweet oven! But ...how are fire bricks available, natural or recycled? Where did your fire birck originate? Don't we import fire brick from China? How is urbanite so bad and fire brick is ok? I don't think the idea of "available" materials should include things that are not produced anywhere near where they are used. Just sayin'. Loved the music though.

How do the wood posts hold up to the heat coming from the oven? Not worried about the charring?

About the wood posts holding up the roof...
Inside the oven the posts are not exposed... they are completely covered with cob (which is fire proof -hee hee). Often, the roof is built as a completely separate structure. It is unique to see a cob oven like this one, built with an integrated roof... looks amazing! but a bit challenging :)

Is a rack put in to rest the pizza or bread on? wouldn't you be setting it in a pile of ashes?

first you sweep the ashes and coals to the back, then spread some cornmeal right on the hot bricks and slide the pizza right in... no rack, and the pizza stays surprisingly ash free. it gets the crust perfect almost everytime. cooks 'em really fast!
