The mushrooms and sherry is a great tip! :D I used white wine before but sherry is more ripened and stronger in taste. A pity we don't have red corn here in Holland but we do have black corn. Very filling. ;) Great pan's you have there too! Very robust and colorfull! I like your style. :D
