So, there are a few absolute purists who believe that "biodynamic" means following the teachings of Steiner 100%. Biodynamics is a century old PHILOSOPHY. "Steiner, in his lectures, encouraged his listeners to verify his SUGGESTIONS scientifically, as he had not yet done."
To call someones riff on this theory as"wrong" is - at best - small minded.
If philosophy's don't practically evolve with the times, they die.

i'm just the guy who shot the video, but chef Chris, who recently passed away, started the restaurant 30 years ago. he was an amazing man whos eyes and conversation lit up the dining room. He once had an apprentice named John Besh (who he loved to tell stories about and always talked about taking over the restaurant) actually took over the restaurant recently. As i'm sure you know, John has his hands in alot of ventures so chef Steve runs the place. just ate there and had an amazing meal!
