The humor in this graveyard, could be a reference to the a graveyard in Transylvania ( a part of Romania ), which is known for being the only happy graveyard in the world. It has similar poems on gravestones, search Sapanta Graveyard ( or sapanta cimitir (lg. romanian) ) and u will see what i mean :)

Carry Nation (Kari Naishon) was a significant figure in American History. She was an avid prohibitionist senior citizen, who would go around in bars in the 1800s with a hatchet and smash everything while quoting the bible. Look her up in google images... its a frightful sight.
I can no longer be aroused by the Rusalka ever since I completed this sidequest as a Paladin... and I'm sickened now by how I felt in the previous three playthroughs as the other classes.
Hercrabbiness moaning though... ahem.

I understand what you mean, but bear in mind that before she transforms, she's still real. The reason she transforms is because her incredibly-old body immediately reflects the decay of all those years instead of retaining the magical preservation it's currently under. Until then, her body is preserved in this state forever.
