My mother makes pralines like no one else. The pecans taste roasted, not raw, and the sugar has a complex flavor beyond basic caramelized sugar. They're much better than the ones you buy in the French Quarter in New Orleans. The difference is in the techniques she demonstrates here.

    How to sweet to see Mama and Daughter cooking together. I miss my Mum so much and the times we spent together. Time is so short and we should always take the time to spend as much as we can with our loved ones! And the Pralines are authentic; the way they should be made. And finally someone pronounces them right- 'prah-lines' not 'pray-lines'. Thanks for this!

    Thanks! I cherish my times with my mom too. I'll be going back for Christmas soon. I wonder how this year's pecan crop is turning out. Some years are better than others.

    I'm not sure. I suspect adding more butter would affect the hardening process.

    @valentinarlopez You asked how long to leave the pralines on the wax paper. I'd say about 5 minutes, or until they are cool and peel off easily.

    Thank you and happy holidays to all who commented! Momma is thrilled by your kind words.  Let me answer a few questions: @midayatre the mystery ingredient is cream of tartar. It's optional. I've done it both ways and couldn't tell the difference. @BLACKBEAUTY8989 you don't add caramel, the sugar becomes caramel as it cooks. @TopdownMX5 yep, you described undercooking and overcooking precisely. @davidh0187dc yes, there's a lot of stirring, try a half batch or take a trip to New Orleans!

    This is the best recipe on youtube hands down. Im from Louisiana and i know the difference and i have to say if you follow her recipe you'll do no wrong. Please note: the better determines the hardness so use the butter sparingly save some for the end. I let the mix sit for a minute then added the butter sparingly. Soft and creamy NOT CARAMELIZED.

    have you ever tried this with other nuts? I wonder how cashews would taste? I only ask because I'm itching to make these today and i only have cashews and walnuts on hand :(
