Portobello Mushroom / Avocado / Pesto Snack

I know this video is a bit choppy but I tried to keep it short for a change.

1 Portobello mushroom, gills and stem removed
1 small mashed or sliced avocado
1 small jar green pesto (Don't get as heavy-handed with the pesto as I did this time, a little goes a long ways. Of course, you can make your own pesto but that kind of defeats the purpose of quick and easy.)
Cheese of choice (I like mozzarella, thinly sliced)
Do NOT salt

Preheat oven to 400 degrees F. (about 204 degrees C, I think)
Line baking sheet with foil and spray lightly with cooking oil.

After cleaning the mushroom, spread the inside with avocado.
Top with a thin layer of pesto sauce, followed by cheese.
Bake for 5 minutes, uncovered.
Tent with foil and bake another 5 to 5 1/2 minutes.
Let stand a couple of minutes before transferring to plate.
Let cool another minute or so before eating.

I've never tried baby portos. I should do that and see if this combo would make good hors d'oeuvres.

As far as the move, I, too, said that I would die in this house. I still might. Either in the house or between the house and the truck, carrying a boxful of cookbooks. But, I’m almost done with the things I want to move, myself. Movers can do the rest.
