Serves 8

250g plain flour
4 eggs
350ml milk
350ml water
16 sausages
20g beef dripping

For the onion gravy
5 medium onions, peeled and finely sliced
150ml red wine
300ml hot stock

Preheat the oven to 220C.

Heat a little oil or butter in a large saucepan and stir in the onions. Season well, cover and cook over a low heat for 45 minutes till softened and golden.

Meanwhile make the batter by whisking together the flour, eggs, milk and water thoroughly. Leave to rest for 15 minutes or so.

Put the dripping in an oven-proof dish and into the oven for 10 minutes until piping hot and smoking. Remove and pour in the batter, then the sausages and put back in the oven for 30 minutes or so.

Remove the lid from the onions and increase the heat. Stir for a couple of minutes to get rid of any excess moisture then add the wine and stock and reduce to required consistency.

Serve with the toad and whatever veg you fancy.

  • Two tablespoons should do it...you could use oil instead - just make sure it's really hot so the batter rises properly!
