E107 is a lot simpler than Joomla and that's why we chose it for our clients. You're right, Joomla has a lot more plugins but we concentrate our install of E107 to core business plugins that we support. I think of it like this "It cost the Americans over a million dollars to create a pen that could be used in space. The Russians used a pencil" ;-)
