If you don't have parchment paper, rub shortening in the pans then dust them with about two tablespoons of AP flour and dump out the xtra. The only hitch is you have to turn them out while the fat is still hot, but that's not much of an issue.

@allencrider Since you cannot cream oil with sugar, so you would have to use the muffin method. and oil is 100% fat. butter is 80-85% fat and 15-20% water/milk solids, so you would have to make proportion adjustments of fat and liquid. Basically you could but it would be a totally different cake, and there is plenty of coconut flavor in this cake already (ive made it and its great), that i don't think it is necessary.
