This is one of the recipes I learned with my dad this summer. For my sake, he called it "Bitter melon with Ground Pork and Egg." It sounded nice but I found it's true name researching online.
My dad called it a poor man's meal because it can be prepared without meat which some families in the Philippines have to.
Ampalaya is supposed to have various health properties but it seems to me that there is enough controversy on the web to prove otherwise. Regardless of science or traditional remedies, Ampalaya is nutritional whether or not it yields the results preached by our own relatives.

Ingredients: Bitter melon, ground pork, 3 eggs, shrimp paste, garlic and onions
I grew up with Ampalaya as a kid, my mom told me to soak in salt water and squeeze out the liquid, good for your blood, my mom has been cooking for years and years. thanks for sharing this;)

VERY GOOD I LOVE AMPALYA!!! I LOVE THE LEAVES TOO!!! I made my ginisang paria with pork but with pork belly, Hoooooo delicious and Ono...(good)...aloha from hawaii marty..oh you scramble your eggs and add at last minute of cooking, i put mines in when everything is done cooking, thumbs up to kaon!!!

I noticed he had three eggs while prepping the dish. At what point does he add that to the pot? Or is it served separate?
