I'm preparing our tradition of Thanksgiving prime rib.

Ingredients:
Rib Roast
Ground Black Pepper
Garlic-peeled
Rock Salt (aka coarse or sea salt)
Thyme

Preheat oven to 525 degrees.
Let the roast sit on the counter, covered, for 20 minutes.
Poke holes in the meat and insert garlic.
Sprinkle rest of ingredients over the roast.
Place roast on a pan and place pan in the middle shelf of the oven.
Cook at 525 degrees for 8 minutes per pound.
Turn off oven and leave the oven closed for 2 hours. The remaining heat in the oven will penetrate the roast. **IMPORTANT: DO NOT OPEN THE OVEN FOR ANY REASON.**
After 2 hours, slice as thick as you want.

**8 minutes per pound will cook to medium in the center. If you want rarer, cook for 7 1/2 minutes per pound. You may have to trial and error to your liking.**
