Japanese cooking with Tomoko from her kitchen in Kobe, Japan. Aemono is a cooked salad. A staple in Japanese cooking. It is most commonly made with sesame paste or dressing but Tomoko shows us simpler, natural, recipe.

  • Umm, is there an english translation of Dashi? Because it's in like, everything in your videos and I don't exactly know where to get them as there's no Asian shops anywhere here. x[

  • It's a soup stock made from seaweed or dried fish (particularly kasuo or what we would call Bonito). You can order dried dashi on the Internet.

  • Just as Oyamake has said, it's essentially a bouillon. It's absolutely esssential to Japanese cooking to acieve auhentic taste, but luckilly comes in instant, granulated form, sort of like how we purchase pre-made chicken bouillon in the west. In addition to checking online, I would also inquire if they have it at your local health food store. I imagine they might also (possibly) carry it in larger, national gourmet/organic food store chains like Whole Foods or Trader Joe's markets.
