Lobster Dinner How to Finish Breaking Down a Whole Lobster.

Hi! Today we are going to break down a steamed lobster and I got a main lobster here that I got from the seafood market and this live weight on this guy was about 1 ¾ pounds. Chick lobsters are usually referred to that because of their small size the males and the females and they usually weigh about a pound and a little over a ¼, pound and half at the most. This guy was about a 1 ¾ so it makes a good demonstration to the video. Again, this guy has already been steamed whole and what we are going to do is just show you the breakdown method for this lobster. For convenience sake, a lot of consumers will just buy the tails and it takes up a lot less space in the kitchen and makes a lot less mess. For today's intent and purposes, we are going to go ahead and show you how to break this down. The claw meat is obviously something that is highly priced and there is some meat on the arms as well. There are some interior things that different chefs like to make different recipes with. For today we will just break it down. I've got some culinary shears here. I actually got some shears that are made for lobsters and crabs and I also got these really handy dandy lobster crackers that look like lobster claws. That's that and we'll come right back and show you how to get started on this guy.
