these rc's come with a 7.2 volt battery which only allows it to go 40mph but with a lipo it would go way faster

It depends. It's a lot of speed for a really good price, and the only way that they can feasibly manage doing that would be using parts that are less expensive in the vehicle. Does this mean lower quality? Not necessarily, but just remember that you get what you pay for.
